To achieve tender, great tasting meats, we use the time tested slow cook (with indirect heat) using real oak for the flavour (and not the time saving liquid smoke). This is done is our wood burning gas fired BBQ Pit.
Our Chicken and ribs are cooked for a full 4 hours. When done, the ribs and chicken are almost falling off the bone, tender and moist. The Boston Butt or Pork Shoulder and Beef Brisket are lovingly cooked for a full 12 hours at a low constant temperature. The end result is meat that is tender and full of the flavour that can only be achieved the good old fashioned way.
